- 1/2 lb. lasagna noodles
- 2 cans cream of shrimp soup
- 1 lb. shelled shrimp
- 1 lb. cottage cheese (can use low or no fat)
- 1 (8 oz.) pkg. cream cheese (low-fat, if desired)
- 1 egg, beaten
- 1/2 c. chopped onion
- 2 Tbsp. grated Parmesan cheese
- 1 sliced tomato
- 2 c. shredded Mozzarella
Directions

1Cook noodles, drain and pat dry.

2Cook shrimp in soup; add a little milk if too thick.

3Mix together cottage cheese, cream cheese, onion and Parmesan cheese.

4Spray 9 x 13-inch pan with cooking spray.

5Layer 1/2 of the noodles, 1/3 of the cheese mixture and 1/3 of the shrimp mixture.

6Repeat, ending with soup mixture.

7Bake at 350° for 30 minutes.

8Stop here if making ahead! Sprinkle 2 cups shredded Mozzarella cheese.

9Slice tomato on top and bake 20 to 30 minutes more until bubbly.
