Seafood Quiche

Ingredients

  • 1 deep dish pie crust, prick and bake 9 minutes
  • 1/4 lb. shrimp, shelled and deveined
  • 1/4 lb. scallops
  • 3 Tbsp. butter
  • 1/4 c. scallions, chopped
  • 1/4 c. mushrooms, chopped
  • 3 eggs
  • 1 c. half and half
  • 1 Tbsp. dry sherry
  • 1/2 c. shredded Swiss cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • dash of nutmeg

    Set aside 2 tablespoons of cheese for top.

    In skillet, melt 1 tablespoon butter and saute scallions and mushrooms, 2 to 3 minutes. Remove and set aside.

    Melt remaining butter and saute shrimp and scallops that have been cut into bite size pieces. Stir frequently. Drain. Add to mushroom mixture.

    In a large bowl, mix remaining ingredients and beat well.

    Pour seafood mixture evenly in pie shell. Add egg mixture. Top with cheese. Bake in preheated oven at 350° for 45 minutes.

    Let stand 10 minutes before serving.
