Seasoned Cauliflower Mashed “Potatoes”

- 1 head Cauliflower, Broken Into Florets
- 1/8 teaspoons Sea Salt (or More To Taste)
- 1/4 cups Coconut Oil
- 1/4 cups Green Onions, Sliced (more If Desired)
- 1/4 cups Cilantro, Minced (more, If Desired)
Directions

1Steam cauliflower florets until easily pierced with a fork.

2In a large mixing bowl, combine steamed florets with sea salt and coconut oil. If florets are still warm, you may not need to melt the coconut oil ahead of time. It will likely melt as it mixes with the cauliflower.

3Using a potato masher, mix ingredients together until they resemble traditional mashed potatoes. Add more coconut oil, if necessary.

4Fold in green onions and cilantro. Serve immediately.
