  • 1/2 head lettuce, shredded
  • 1 green pepper, chopped, 1 1/2 c. sliced cucumbers or 4 stalks sliced celery
  • 1/2 c. red onion, sliced
  • 2/3 c. frozen petite peas
  • 1 1/2 c. chopped tomato
  • 2 tsp. apple cider vinegar
  • 2 tsp. water
  • 1 tsp. sugar
  • 1 c. nonfat cottage cheese
  • 3 tsp. sugar
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic salt
  • 1 tsp. Italian seasoning
  • 2 Tbsp. Parmesan cheese
  • 1 Tbsp. bacon bits

Directions

    Layer vegetables in a large bowl.

    Mix vinegar, water and 1 teaspoon sugar and pour over salad.

    Blend cottage cheese until creamy.
