Shaker Lemon Pie

- 2 large lemons, sliced thin (leave rind on)
- 2 c. sugar
- 4 eggs
- 1 pie crust
Directions

1Remove seeds from lemons.

2Mix lemons with sugar and let stand overnight.

3Add beaten eggs and stir.

4Pour into pie shell and bake at 450° for 15 minutes.

5Lower heat to 375° and bake for 20 minutes.

6The Shaker recipe calls for a top crust, but this is optional.
