Shaker Lemon Pie

  • 2 large lemons, sliced thin (leave rind on)
  • 2 c. sugar
  • 4 eggs
  • 1 pie crust

Directions

    Remove seeds from lemons.

    Mix lemons with sugar and let stand overnight.

    Add beaten eggs and stir.

    Pour into pie shell and bake at 450° for 15 minutes.

    Lower heat to 375° and bake for 20 minutes.

    The Shaker recipe calls for a top crust, but this is optional.
