- 2 c. cooked rice (preferably brown)
- 2 c. milk
- 1/2 c. nonfat dry milk
- 1/4 c. brown sugar
- 1 Tbsp. butter or margarine, melted
- 2 eggs, well beaten
- 1/2 lemon rind, grated
- 1/2 tsp. vanilla
- 1/4 c. raisins
- bread crumbs or wheat germ
Directions

1Mix all ingredients together, except crumbs or wheat germ. Grease a 1-quart casserole dish or individual custard cups and sprinkle bottom with some crumbs or wheat germ. Pour in pudding mix and sprinkle more crumbs on top. Bake at 350° for 20 minutes or until a knife inserted in center comes out clean.
