  • 2 c. cooked rice (preferably brown)
  • 2 c. milk
  • 1/2 c. nonfat dry milk
  • 1/4 c. brown sugar
  • 1 Tbsp. butter or margarine, melted
  • 2 eggs, well beaten
  • 1/2 lemon rind, grated
  • 1/2 tsp. vanilla
  • 1/4 c. raisins
  • bread crumbs or wheat germ

Directions

    Mix all ingredients together, except crumbs or wheat germ. Grease a 1-quart casserole dish or individual custard cups and sprinkle bottom with some crumbs or wheat germ. Pour in pudding mix and sprinkle more crumbs on top. Bake at 350° for 20 minutes or until a knife inserted in center comes out clean.
