"She" Crab Soup

Ingredients

  • 1 small onion, minced
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 2 tsp. Worcestershire sauce
  • salt and pepper to taste
  • 1 qt. half and half
  • 1/2 pt. fresh lump crabmeat (8 oz.)
  • 1/3 c. white wine (dry Sauterne or Chablis)

Directions

    Saute onion in butter (do not brown).

    Add flour, Worcestershire sauce, salt and pepper to onion in butter.

    Add half and half and cook over low heat. Stir constantly until thick. Remove from heat and add the crabmeat and wine.

    Top with pat of butter when ready to serve.

    Serves 6 to 8.
