Ingredients

  • 1 lb. lean ground beef
  • 1 pkg. dry brown gravy mix
  • 1 c. frozen peas
  • 2 Tbsp. shredded Cheddar cheese or 2 Tbsp. melted butter
  • 1 medium onion, diced
  • 4 carrots, peeled and diced
  • 2 c. mashed potatoes

    Brown ground beef and onion; drain.

    Stir in dry gravy mix. Meanwhile, simmer carrots in 1 cup of salted water for 10 minutes. Add the peas; simmer for an additional 3 minutes.

    Stir water, peas and carrots into the ground beef mixture.

    Place beef and vegetable mixture in a shallow, ovenproof casserole dish (about 9 x 9 x 2-inch).

    Top with hot mashed potatoes.

    Sprinkle with shredded cheese or melted butter.

    Bake at 350° for 30 minutes, or until mixture is hot and topping is lightly browned.
