- 2 lb. stew beef, cut in 1 1/2-inch cubes
- 1 onion, sliced
- 1 stalk celery
- 6 to 8 carrots, in chunks
- 2 tsp. salt
- 2 Tbsp. sugar
- 2 Tbsp. tapioca
- 2 c. tomato juice
- 4 to 6 medium potatoes, quartered
- 1/2 c. sliced mushrooms (optional)
Directions

1Place ingredients in large casserole dish or Dutch oven in the order given.
