  • 2 lb. stew beef, cut in 1 1/2-inch cubes
  • 1 onion, sliced
  • 1 stalk celery
  • 6 to 8 carrots, in chunks
  • 2 tsp. salt
  • 2 Tbsp. sugar
  • 2 Tbsp. tapioca
  • 2 c. tomato juice
  • 4 to 6 medium potatoes, quartered
  • 1/2 c. sliced mushrooms (optional)

Directions

    Place ingredients in large casserole dish or Dutch oven in the order given.

    Cover tightly and bake 4 hours in a 250° oven. Serves 6 to 8 persons.
