Shredded Yams

  • 2 lb. raw sweet potatoes
  • 1/2 stick margarine
  • 1 c. sugar
  • 1/2 c. white corn syrup
  • 1/2 c. water
  • 1 c. pineapple juice

Directions

    Shred yams in a gallon of water.

    Add 1 tablespoon of salt. Drain and wash well.

    Put in glass baking dish that is 12 x 6 x 3-inches.

    Mix sugar, syrup and water and cook until a simple syrup has been formed.

    Add margarine.

    Pour pineapple juice over shredded yams, then the syrup mixture.

    Bake at 350° for 35 minutes, or until they are transparent in color.
