- 1 1/2 lbs medium shrimp, peeled and deveined
- salt and pepper, to taste
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- 1 (14 1/2 ounce) can diced tomatoes with juice
Directions

1Season the shrimp generously with salt and pepper.

2In a large skillet over medium-high heat, heat 1 Tbs oil.

3Add the seasoned shrimp and cook until opaque throughout, turning occasionally, 2-3 minute.

4Transfer to a bowl and set aside.

5Reduce the heat to medium.

6Add remaining Tbs of oil to the pan, and cook the garlic and red pepper flakes until fragrant, about 1 minute.

7Add the tomatoes and their juice along with 2 cups water, and bring to a boil.

8Reduce heat to a simmer, and stir occasionally until the tomatoes have broken down and become saucy, about 15 minute.

9Serve over warm polenta.
