Shrimp Au Gratin

- 4 Tbsp. butter or margarine
- 3 Tbsp. chopped onion
- 1/4 c. flour
- 1/2 tsp. salt
- 1/4 tsp. dry mustard
- pinch of pepper
- 1 1/2 c. milk
- 1 c. shredded Swiss cheese
- 1 lb. cooked shrimp, peeled
- 1 (4 oz.) can mushrooms, drained
- 1/4 c. bread crumbs
Directions

1Melt 3 tablespoons butter in saucepan.

2Saute onion.

3Stir in flour, salt, mustard and pepper.

4Cook, stirring constantly until mixture is bubbly.

5Add milk; cook over medium heat, stirring constantly until sauce thickens and bubbles.

6Add 3/4 cup cheese; stir until melted.

7Add shrimp and mushrooms to sauce.

8Turn into a buttered 6-cup shallow baking dish.

9Combine crumbs and remaining cheese.

10Sprinkle over top of dish.

11Dot with remaining 1 tablespoon butter.

12Bake in hot oven, 400°, for 10 minutes or until sauce is bubbly and top is lightly browned.

13Makes 4 servings.
