Shrimp Bisque

  • 1 1/2 lb. peeled and deveined, cooked shrimp, chopped fine
  • 3 c. milk (room temperature)
  • 3 Tbsp. sherry
  • dash of nutmeg
  • 6 Tbsp. butter
  • 2 Tbsp. grated onion
  • 1 c. light cream
  • 2 Tbsp. parsley or chives
  • salt and pepper to taste

Directions

    In double boiler, melt butter and onion.

    Gradually add milk and shrimp.

    Cook for 2 minutes.

    Slowly stir in light cream. Heat, but do not boil.

    Add sherry, parsley or chives, nutmeg, salt and pepper.

    Blend well.
