Shrimp Bread Stew

  • shrimp
  • 1 bread Alentejo, or whole wheat bread, if possible, 2 days old
  • olive oil
  • garlic to taste
  • 1 egg yolk
  • coriander

Directions

    Boil the shrimp.

    Moisten the sliced bread in the water used to boil the shrimp.

    In a sauce pan, heat a little bit of oil, and lightly fry the finely chopped garlic and shrimp.

    Drain the bread very well, and add to saucepan.

    Add chopped coriander.

    Remove saucepan from heat, and immediately add the egg yolk, stir quickly, and serve immediately.
