Ingredients
- 2 to 3 c. shrimp, cooked and peeled
- 2 Tbsp. lemon juice
- 3 Tbsp. Wesson oil
- 3/4 c. raw rice
- 2 Tbsp. butter
- 1/4 c. chopped green pepper
- 1/4 c. chopped onion
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 can tomato soup
- 1 c. heavy cream
- 1/4 c. sherry wine
Directions

1Marinate shrimp in lemon juice and oil in Pyrex dish for 2 hours.

2Cook and drain rice.

3Saute onion and pepper in butter for 2 minutes.

4Mix all ingredients together.

5Pour into buttered casserole.

6Bake at 350° for 55 minutes.
