Shrimp Casserole

Ingredients

  • 2 to 3 c. shrimp, cooked and peeled
  • 2 Tbsp. lemon juice
  • 3 Tbsp. Wesson oil
  • 3/4 c. raw rice
  • 2 Tbsp. butter
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped onion
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 can tomato soup
  • 1 c. heavy cream
  • 1/4 c. sherry wine

Directions

    Marinate shrimp in lemon juice and oil in Pyrex dish for 2 hours.

    Cook and drain rice.

    Saute onion and pepper in butter for 2 minutes.

    Mix all ingredients together.

    Pour into buttered casserole.

    Bake at 350° for 55 minutes.
