Ingredients
- 2 Tbsp. cooking oil
- 1 medium onion, diced
- 1/2 c. green pepper, diced
- 1/2 c. celery, diced
- 1 clove garlic, mashed
- 1 (8 oz.) can tomato sauce
- 3/4 c. water
- 1/2 tsp. salt
- dash of pepper
- 1/2 tsp. thyme
- 1 bay leaf
- 12 oz. frozen shrimp
Directions

1Chop onion, green pepper and celery and mince the garlic. Saute in cooking oil about 5 minutes.

2Stir in tomato sauce, water, salt, pepper and spices.

3Simmer about 10 minutes.

4Add frozen shrimp.

5Simmer 5 to 8 minutes.

6(If shrimp is raw, simmer until it turns pink.)

7Remove bay leaf before serving.

8Serve over hot rice.
