Ingredients

  • 1 medium onion, minced
  • 1/2 c. chopped green pepper
  • 1/4 c. diced celery
  • 3 Tbsp. butter or margarine
  • 1 tsp. salt
  • 1 to 2 tsp. parsley flakes
  • 1/4 tsp. cayenne red pepper
  • 1 (6 oz.) can tomato paste
  • 2 c. water
  • 2 c. cleaned, cooked shrimp, cut into bite-size pieces
  • 3 c. hot cooked rice

Directions

    Cook and stir onion, pepper and celery in butter until tender. Stir in remaining ingredients except shrimp and rice.

    Cook over low heat, stirring occasionally, about 30 minutes.

    Stir in shrimp and heat through.

    Serve over rice.
