Ingredients
- 1 medium onion, minced
- 1/2 c. chopped green pepper
- 1/4 c. diced celery
- 3 Tbsp. butter or margarine
- 1 tsp. salt
- 1 to 2 tsp. parsley flakes
- 1/4 tsp. cayenne red pepper
- 1 (6 oz.) can tomato paste
- 2 c. water
- 2 c. cleaned, cooked shrimp, cut into bite-size pieces
- 3 c. hot cooked rice
Directions

1Cook and stir onion, pepper and celery in butter until tender. Stir in remaining ingredients except shrimp and rice.

2Cook over low heat, stirring occasionally, about 30 minutes.

3Stir in shrimp and heat through.

4Serve over rice.

5Makes 4 to 6 servings.
