Ingredients

  • 4 Tbsp. olive oil
  • 1/2 c. chopped onion
  • 1 (16 oz.) can tomato sauce
  • 1 (16 oz.) can whole tomatoes
  • 1 clove garlic, crushed
  • pepper to taste
  • 1/4 c. chopped celery
  • 1/4 c. chopped green peppers
  • 3 c. water
  • 3 lb. boiled and cleaned shrimp
  • hot cooked rice

Directions

    Pour olive oil in heavy saucepan. Stir in celery, onion and green pepper. Cook until tender. Add garlic and pepper to taste. In a bowl, mix together the tomato sauce, water and whole tomatoes.

    Cut shrimp into 1/2-inch pieces and blend into tomato mixture. Add to the onion, green pepper and celery mixture.

    Cook slowly for 3 to 4 hours or place in slow cooker.

    Serve over hot rice.
