- 1/2 c. oil
- 1/4 c. flour
- 2 c. chopped onion
- 1/2 c. green pepper
- 1 c. chopped celery
- 2 (8 oz.) cans tomato sauce
- 2 lb. shrimp (raw or boiled)
- 2 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. red pepper
- 1/4 to 1/2 c. water
- 1 1/2 tsp. parsley
- 1 1/2 tsp. green onion tops, chopped
- cooked rice
Directions

1Make golden brown roux of oil and flour.

2Add onion, green pepper and celery and cook slowly until clear.

3Add tomato sauce and cook, covered, over low heat for 20 minutes.

4Add shrimp (if raw, cook until pink), salt and black and red pepper.

5Add water, if necessary.

6Cook 10 to 15 minutes.

7When ready to serve, stir in parsley and onion tops.

8Serve on rice.
