Ingredients

  • 1/2 c. oil
  • 1/4 c. flour
  • 2 c. chopped onion
  • 1/2 c. green pepper
  • 1 c. chopped celery
  • 2 (8 oz.) cans tomato sauce
  • 2 lb. shrimp (raw or boiled)
  • 2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. red pepper
  • 1/4 to 1/2 c. water
  • 1 1/2 tsp. parsley
  • 1 1/2 tsp. green onion tops, chopped
  • cooked rice

Directions

    Make golden brown roux of oil and flour.

    Add onion, green pepper and celery and cook slowly until clear.

    Add tomato sauce and cook, covered, over low heat for 20 minutes.

    Add shrimp (if raw, cook until pink), salt and black and red pepper.

    Add water, if necessary.

    Cook 10 to 15 minutes.

    When ready to serve, stir in parsley and onion tops.

    Serve on rice.
