Shrimp Curry

Ingredients

  • 2 lb. fresh peeled shrimp
  • 3 Tbsp. salad oil
  • 1 c. sliced onions
  • 1/2 tsp. salt
  • 3 1/2 tsp. curry powder
  • 1 tsp. vinegar
  • 1 tsp. sugar
  • 1 tsp. Worcestershire sauce
  • 3/4 c. water
  • 2 cans condensed tomato soup
  • 1 Tbsp. butter
  • 6 c. hot cooked rice

Directions

    Prepare sauce by sauteing onions in oil until tender.

    Stir in next 9 ingredients.

    Simmer, uncovered, 10 minutes.

    Boil shrimp in water for 5 minutes or until pink.

    Add cooked shrimp when ready to eat.

    (Even better when sauce is made the day before and reheated.)

    Serves 6 to 8.
