Shrimp Curry

Ingredients

  • 1 lb. shrimp, shelled and deveined
  • 1 (8 oz.) can pineapple tidbits
  • 1 avocado, peeled and cut in wedges
  • 2 Tbsp. margarine
  • 1 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 2 tsp. curry powder
  • 1 can condensed cream of chicken soup
  • hot cooked rice

Directions

    Drain pineapple, reserving juice.

    Moisten avocado with juice to prevent browning.

    Add water to remaining juice to make 1/2 cup.

    Saute celery, onion and shrimp in margarine for 3 minutes. Add curry.

    Cook 1 minute.

    Blend in soup and remaining juice. Stir in pineapple.

    Heat thoroughly.

    Serve over hot cooked rice. Garnish with avocado slices.
