Ingredients
- 1 lb. shrimp, shelled and deveined
- 1 (8 oz.) can pineapple tidbits
- 1 avocado, peeled and cut in wedges
- 2 Tbsp. margarine
- 1 1/2 c. chopped celery
- 1/2 c. chopped onion
- 2 tsp. curry powder
- 1 can condensed cream of chicken soup
- hot cooked rice
Directions

1Drain pineapple, reserving juice.

2Moisten avocado with juice to prevent browning.

3Add water to remaining juice to make 1/2 cup.

4Saute celery, onion and shrimp in margarine for 3 minutes. Add curry.

5Cook 1 minute.

6Blend in soup and remaining juice. Stir in pineapple.

7Heat thoroughly.

8Serve over hot cooked rice. Garnish with avocado slices.
