Ingredients

  • 1 medium onion, halved
  • 3 stalks celery
  • 4 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 large green pepper, quartered
  • 1 (28 ounce) can whole tomatoes, chopped
  • 1 (16 ounce) can tomato sauce
  • 1 teaspoon sugar
  • 1 bay leaf
  • 1 teaspoon thyme
  • 12 teaspoon salt
  • 1 tablespoon parsley
  • 1 teaspoon hot pepper sauce
  • 2 lbs medium shrimp
  • hot cooked rice

Directions

    Slice onion, celery and green pepper.

    Keep each separate.

    Heat oil in 5 quart pan over medium heat.

    Add garlic and saute for 1 minute.

    Add onion and saute for 2 minutes.

    Add celery and green pepper and saute for 3 minutes longer.

    Add tomatoes, tomato sauce, salt, bay leaf, sugar, thyme, parsley and hot pepper sauce.

    Reduce heat and simmer for 15 minutes.

    Add shrimp and cook for 4-5 minutes longer, stirring gently.

    Serve over hot cooked rice.
