Ingredients
- 1 medium onion, halved
- 3 stalks celery
- 4 tablespoons olive oil
- 2 garlic cloves, minced
- 1 large green pepper, quartered
- 1 (28 ounce) can whole tomatoes, chopped
- 1 (16 ounce) can tomato sauce
- 1 teaspoon sugar
- 1 bay leaf
- 1 teaspoon thyme
- 12 teaspoon salt
- 1 tablespoon parsley
- 1 teaspoon hot pepper sauce
- 2 lbs medium shrimp
- hot cooked rice
Directions

1Slice onion, celery and green pepper.

2Keep each separate.

3Heat oil in 5 quart pan over medium heat.

4Add garlic and saute for 1 minute.

5Add onion and saute for 2 minutes.

6Add celery and green pepper and saute for 3 minutes longer.

7Add tomatoes, tomato sauce, salt, bay leaf, sugar, thyme, parsley and hot pepper sauce.

8Reduce heat and simmer for 15 minutes.

9Add shrimp and cook for 4-5 minutes longer, stirring gently.

10Serve over hot cooked rice.
