Ingredients

  • 5 c. water
  • 2 c. fresh snow peas
  • 1 lb. cooked medium shrimp, peeled and deveined
  • 2 c. cooked brown rice
  • 1 medium red onion, diced
  • 1 medium sweet red pepper, diced
  • 1/3 c. fresh minced parsley
  • 2 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. canola oil
  • 2 Tbsp. sesame oil
  • 1/2 tsp. ground ginger
  • 1 minced garlic clove

Directions

    In a saucepan, bring water to a boil; add peas, cover and cook for 2 minutes. Drain.

    Place peas in ice water; drain and pat dry. In a large bowl, combine shrimp, rice, onion, red pepper, parsley and snow peas. In a small jar, combine lemon juice, soy sauce, canola oil, sesame oil, ginger and garlic. Shake well and pour over shrimp mixture. Toss to coat.
