Shrimp Stuffed Peppers

Ingredients
- 4 large or 6 small green peppers
- 1/2 c. finely chopped onion
- 1/4 c. chopped celery
- 1/4 c. margarine, melted
- 1 c. chopped fresh mushrooms
- 1 lb. shrimp, peeled, deveined and chopped
- 1/2 c. cooked rice
- salt and pepper to taste
- 4 to 6 whole shrimp (optional)
- lemon wedges (optional)
Directions

1Cut off tops of green peppers; remove seeds.

2Cook peppers in boiling water 5 minutes; drain and set aside.

3Saute onion and celery in margarine in a heavy saucepan until crisp-tender.

4Add mushrooms and continue cooking until all vegetables are tender. Stir in chopped shrimp and cook 5 minutes or until done.

5Add rice, salt and pepper to shrimp mixture, mixing well.

6Stuff peppers with rice mixture.

7Place peppers in an 8-inch square pan (baking dish). Pour 1/2 cup water into the dish.

8Bake, uncovered, at 350° for 15 minutes.

9Garnish with cooked shrimp and lemon wedges if desired. Makes 6 servings.
