- 1 Tbsp. plus 1 tsp. vegetable oil
- 1 large onion, sliced
- 1 large green pepper, sliced
- 1 (4 oz.) can mushroom pieces, drained
- 1 1/4 lb. boneless chicken, skin removed
- 1 (8 oz.) can tomato sauce
- 1 (16 oz.) can tomatoes, chopped and drained
- 1 tsp. Worcestershire sauce
- 1 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/4 tsp. garlic powder
- salt and pepper to taste
Directions

1Heat oil in a large nonstick pan over medium heat.

2Add onion, green pepper and mushrooms.

3Cook until slightly tender, about 10 minutes.

4Cut chicken into 2-inch pieces; add to onion mixture. Cook, turning chicken frequently, until pink is gone.

5Add remaining ingredients; simmer for 10 to 15 minutes, until heated through and chicken is cooked.

6Serve with rice.
