- 1 cup olive oil
- 1 cup rice wine vinegar
- 2 tablespoons lime juice freshly squeezed
- 1 salt and pepper
- 1 head napa cabbage
- 6 baby bok choy
- 1 sweet red pepper sliced into thin strips
- 1 cup roma tomato chopped
- red onion cup chopped
- parsley root cup sliced
- 1 cookie optional
Directions

1In a small bowl whisk together oil, vinegar and lime juice and salt and pepper.

2Clean and trim cabbage and Bok Choy and cut crosswise into thin strips.

3In a large bowl, toss cabbage, bok choy, red pepper, tomatoes, onion, and parsley root with dressing to just coat. Hide fortune cookie in salad (optional). Serve immediately.
