Ingredients

  • 1 cup olive oil
  • 1 cup rice wine vinegar
  • 2 tablespoons lime juice freshly squeezed
  • 1 salt and pepper
  • 1 head napa cabbage
  • 6 baby bok choy
  • 1 sweet red pepper sliced into thin strips
  • 1 cup roma tomato chopped
  • red onion cup chopped
  • parsley root cup sliced
  • 1 cookie optional

Directions

    In a small bowl whisk together oil, vinegar and lime juice and salt and pepper.

    Clean and trim cabbage and Bok Choy and cut crosswise into thin strips.

    In a large bowl, toss cabbage, bok choy, red pepper, tomatoes, onion, and parsley root with dressing to just coat. Hide fortune cookie in salad (optional). Serve immediately.
