Sizzling Rice Soup

Ingredients
- 1/4 c. short grain rice
- 1 (6 oz.) pkg. frozen pea pods
- 5 c. homemade chicken broth
- 1 c. cooked shrimp, halved lengthwise
- 1/2 c. chopped bok choy
- 1/4 c. sliced water chestnuts
- cooking oil for deep fat frying
- 2 Tbsp. sliced green onion
Directions

1Cook rice and cool.

2Divide rice into 8 portions.

3With hands, shape and press each portion into a 2-inch patty.

4Thaw pea pods by running hot water over them; cut pea pods into 1-inch lengths.

5In saucepan, heat chicken broth to boiling.

6Add pea pods, shrimp, bok choy and water chestnuts.

7Simmer 2 minutes. Reduce heat and keep warm.
