Sizzling Rice Soup

Ingredients

  • 1/4 c. short grain rice
  • 1 (6 oz.) pkg. frozen pea pods
  • 5 c. homemade chicken broth
  • 1 c. cooked shrimp, halved lengthwise
  • 1/2 c. chopped bok choy
  • 1/4 c. sliced water chestnuts
  • cooking oil for deep fat frying
  • 2 Tbsp. sliced green onion

Directions

    Cook rice and cool.

    Divide rice into 8 portions.

    With hands, shape and press each portion into a 2-inch patty.

    Thaw pea pods by running hot water over them; cut pea pods into 1-inch lengths.

    In saucepan, heat chicken broth to boiling.

    Add pea pods, shrimp, bok choy and water chestnuts.

    Simmer 2 minutes. Reduce heat and keep warm.
