  • 1 pound Bacon
  • 1/2 whole Onion, Chopped
  • 1 whole Green Pepper, Chopped
  • 1 bag (about 32 Oz. Bag) Cubed Hash Browns
  • 1-1/2 cup Shredded Cheese
  • 6 whole Eggs

    Fry bacon in a skillet, remove to drain on paper towels. Remove all but 3 tablespoons drippings from the skillet, then add onion, pepper and potatoes. Cover and cook for 15 minutes or until potatoes are browned, stirring occasionally. Add cheese and stir. Spread mixture so that there are 6 holes and fill with eggs. Top with 8 slice of bacon; cover and cook until eggs are set; about 4 minutes or longer if you like them over hard. Serve with extra bacon and toast or pancakes.
