- 2 (3 1/2 ounce) bags quick-cooking rice
- 12 medium red bell pepper, chopped
- 12 small onion, chopped
- 1 cup fresh mushrooms, sliced
- 2 tablespoons vegetable oil
- 1 garlic clove, minced
- 1 teaspoon cajun seasoning
- 14 teaspoon salt
- 12 teaspoon black pepper
- 3 tablespoons chopped pecans, toasted
Directions

1Cook rice according to package directions.

2Saute bell pepper, onion and mushrooms in hot vegetable oil in a large skillet over medium high heat for 5 minutes.

3Adfd garlic and saute 2 minutes longer.

4Stir in cooked rice and spices.

5Sprinkle with toasted pecans and serve.
