Slow Cooked Eggplant

  • 1 large eggplant
  • 1 can stewed tomatoes
  • 1 hot banana pepper or hot sauce to taste
  • 1 large onion, diced
  • 2 cloves of diced garlic
  • Thyme, salt and pepper to taste
  • A pinch of sugar

Directions

    Slice the eggplant, place it in a dish, salt it and weigh the dish down so that the bitter juices can drain for about 2 hours.

    Rinse the eggplant and place all of the ingredients in a slow cooker.

    Cook at medium temperature until the eggplant is tender, about 2-3 hours.
