- 1 large eggplant
- 1 can stewed tomatoes
- 1 hot banana pepper or hot sauce to taste
- 1 large onion, diced
- 2 cloves of diced garlic
- Thyme, salt and pepper to taste
- A pinch of sugar
Directions

1Slice the eggplant, place it in a dish, salt it and weigh the dish down so that the bitter juices can drain for about 2 hours.

2Rinse the eggplant and place all of the ingredients in a slow cooker.

3Cook at medium temperature until the eggplant is tender, about 2-3 hours.
