Ingredients
- 2 cloves garlic, crushed
- 1 teaspoon dry rosemary
- 1 tbsp. butter and 1 tbsp. oil
- Salt and pepper
- 1/4 c. dry sherry
- 1/4 c. chicken stock
- 4 sm. lamb chops
Directions

1Preheat oven to 350 degrees.

2Line baking sheet with foil.

3Rub crushed garlic and rosemary into chops.

4Heat butter and oil in frying pan.

5When sizzling, add in chops and move around so as not to stick.

6When browned, turn over.

7Salt and pepper the cooked side.

8Remove from pan and put on baking sheet.

9Bake for 15 min.

10Pour off juice from pan; add in sherry, raise the heat and reduce by half.

11Add in chicken stock, cook and reduce again by half.

12Pour sauce over chops and serve with Spinach Souffle.
