- 1 lb. salt
- 2 c. brown sugar
- 1 Tbsp. saltpeter
- 2 Tbsp. garlic powder
- 1 Tbsp. whole cloves, crushed
- 1 Tbsp. crushed bay leaves
- 2 Tbsp. onion powder
- 1 herring
Directions

1Clean and cut herring; leave head on.

2Rub with a mixture of dry ingredients.

3Let herring cure in mixture for 7 days at 35°. Reapply mixture when needed so that the fish is always coated. After 7 days, rinse with fresh water and hang until dry.

4Smoke at 70° to 80° in a home smoker for 7 days.
