  • 1 lb. salt
  • 2 c. brown sugar
  • 1 Tbsp. saltpeter
  • 2 Tbsp. garlic powder
  • 1 Tbsp. whole cloves, crushed
  • 1 Tbsp. crushed bay leaves
  • 2 Tbsp. onion powder
  • 1 herring

Directions

    Clean and cut herring; leave head on.

    Rub with a mixture of dry ingredients.

    Let herring cure in mixture for 7 days at 35°. Reapply mixture when needed so that the fish is always coated. After 7 days, rinse with fresh water and hang until dry.

    Smoke at 70° to 80° in a home smoker for 7 days.
