- 2 1/2 lb. fresh jumbo shrimp
- 1/2 c. olive oil
- 1/3 c. lime juice (fresh)
- 1 clove chopped garlic
- 2 Tbsp. coarsely ground pepper
- 1 Tbsp. oregano
- 1 Tbsp. salt
- hickory chips (for smoking)
Directions

1Shell and devein raw shrimp.

2Wash.

3Marinate shrimp overnight in remaining ingredients.

4Skewer shrimp shoulder to shoulder. Build a medium fire.

5Place damp hickory chips on white coals. Cook shrimp for 4 minutes.

6(Cover to grill should be closed.) Brush with marinade.

7Cook 10 minutes longer.

8Turn shrimp.

9Brush with marinade.

10Add more hickory chips.

11Smoke 10 minutes more. (Shrimp should not be placed directly over the coals.)
