  • 1 1/4 lb smoked rainbow trout, skin and bones removed, flesh flaked into bite-sized pieces
  • 2 None large avocados, coarsely chopped
  • 2 None Persian cucumbers, cut into ribbons
  • 6 None bocconcini cheese (small mozzarella balls), drained, quartered
  • 3 None shallots, thinly sliced
  • 2 oz baby arugula
  • None None For the Sour Cream Dressing
  • 1/2 oz baby arugula
  • 3/4 cup sour cream
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

    Combine fish, avocados, cucumbers, cheese, shallots and arugula in a large serving bowl.
