Ingredients
- 14-1/8 oz. snapper
- 3-1/2 oz. minced pork
- chicken
- 1/2 oz. coriander
- 1/2 oz. garlic, chopped
- 1/8 oz. pepper
- 3-1/2 oz. onion, chopped
- 2 eggs, beat together
- 1 oz. fish sauce
- 1/8 oz. sugar
- 3-1/2 oz. chilli sauce
- 1/4 oz. crab shells
Directions

1Grind coriander, garlic and pepper together.

2Mix pork (or chicken) with the ground ingredients.

3Stir in snapper, onion, fish sauce and sugar.

4Mix well.

5Fill the crab shells with the mixture and steam for 15 minutes.

6Let cool.

7Dip the steamed snapper in beaten eggs.

8Deep-fry in oil over a medium heat until golden brown.

9Arrange on a plate with a side dish of chilli sauce.
