Snappy Asparagus Dip

Ingredients

  • 8 oz. asparagus
  • 1/2 c. dairy sour cream
  • 1/4 c. green taco sauce or salsa
  • 1/4 tsp. lime juice
  • 1/8 tsp. salt
  • dash of pepper
  • dash of ground red pepper

Directions

    Snap off and discard woody bases from asparagus.

    If desired, scrape off scales.

    Cook, covered, in a small amount of boiling water until very tender, about 15 minutes.

    Drain; cool.

    Place asparagus in blender container.

    Cover; blend until smooth. Transfer to bowl.

    Stir in sour cream, taco sauce, lime juice, salt, pepper and red pepper.

    Chill, covered, up to 24 hours.
