- 1 medium head cabbage
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 pt. milk plus 1 pt. cream or milk
- 1 bay leaf
- 1 1/2 tsp. herb salt (optional)
- 2 vegetable bouillon cubes (optional)
- 1/4 lb. sharp Cheddar cheese, grated
Directions

1Cook cauliflower and discard broth.

2Make a roux with the butter and flour, then add to roux 1 pint milk and bay leaf and simmer 10 to 15 minutes, stirring occasionally.

3Remove bay leaf and blend cooked mixture, half of cauliflower, 1 pint cream or milk, salt and vegetable cubes until liquified.

4Reheat and add the remainder of the cauliflower (finely chopped).

5(Half the cauliflower is blended, half is chopped for texture.)

6Garnish with cheese.

7Serves 4.
