- 2 envelopes Knox gelatin
- 1 c. boiling water
- 1 c. sugar
- 1 (12 oz.) Cool Whip
- 1 angel food cake
- 1/2 c. cold water
- 1 Tbsp. plus 1 tsp. lemon juice
- 1 (20 oz.) can crushed pineapple (reserve 1/4 c. juice)

Directions

1Combine gelatin and 1/2 cup water.

2Stir and add the boiling water.

3Add lemon juice, sugar and pineapple; stir.

4Set in refrigerator until partially congealed.

5Add 2/3 of the Cool Whip to pineapple mixture.

6Stir.

7Break 1/2 the angel food cake into pieces and layer in a 9 x 13-inch pan.

8Cover cake with 1/2 of the gelatin, pineapple mixture.

9Repeat the above with another layer of cake and pineapple.

10Ice over the top with the remaining 1/3 of Cool

11Whip.

12Sprinkle with coconut.

13Let set overnight. Cut in small cubes.
