Snowball Cake

  • 2 envelopes Knox gelatin
  • 1 c. boiling water
  • 1 c. sugar
  • 1 (12 oz.) Cool Whip
  • 1 angel food cake
  • 1/2 c. cold water
  • 1 Tbsp. plus 1 tsp. lemon juice
  • 1 (20 oz.) can crushed pineapple (reserve 1/4 c. juice)

Directions

    Combine gelatin and 1/2 cup water.

    Stir and add the boiling water.

    Add lemon juice, sugar and pineapple; stir.
  4. 4
    Set in refrigerator until partially congealed.

    Add 2/3 of the Cool Whip to pineapple mixture.

    Stir.

    Break 1/2 the angel food cake into pieces and layer in a 9 x 13-inch pan.

    Cover cake with 1/2 of the gelatin, pineapple mixture.

    Repeat the above with another layer of cake and pineapple.

    Ice over the top with the remaining 1/3 of Cool

    Whip.

    Sprinkle with coconut.

    Let set overnight. Cut in small cubes.
