- 1 Yellow or Red Onion
- 1 Green Pepper
- 1 Red Bell Pepper
- 1 Red, Yellow and Orange Sweet Peppers
- 1 Garlic
- 1 Cilantro
- 1 Culantro (Coriander)
- 1 pinch Salt
Directions

1AMOUNT OF INGREDIENTS DEPENDS ON HOW MUCH YOU WANT TO MAKE.

2Rinse vegetables thoroughly and cut in large chunks.

3Add everything to blender and blend until smooth.

4If you don't have a blender, dice all veggies in small pieces and add everything to a pan on medium heat with a little EVOO and sautee until onions are translucent and veggies are soft.

5Make sure not to over cook, remember it will cook even more when you use it later.

6If you're using a blender and prefer a thicker consistency like I do, there's no need to add water or olive oil, the vegetables have enough.

7But you can add liquid if you prefer a smoother consistency.

8Keep a weeks amount in a closed container in the fridge.

9Store the rest (up to 2 months or more) in a tighly seeled plastic container in the freezer and use as needed.

10Make sure you wash your blender 2-3 times with SOAP and HOT water because nobody wants garlic and onion milkshakes if you know what I mean ;-)
