- 8 large eggs
- Fine sea salt and freshly ground black pepper
Directions

1Bring a large pot of water to a boil.

2Set a timer for 5 minutes and 15 seconds, gently lower the eggs into the pot, start the timer, and turn the heat down so that the water boils gently.

3While the eggs cook, prepare an ice bath.

4When the timer rings, transfer the eggs to the ice bath.

5Let them cool completely, then gently crack the shells and carefully peel the eggs.

6This is a delicate process and takes practice since the egg is still soft on the inside.

7The peeled eggs can be kept in the refrigerator for up to 2 days.

8To serve, bring a pot of water to 140F (60C).

9Place the eggs in the water for 10 minutes to just heat them through.

10Transfer the eggs to egg cups or small bowls and season with salt and pepper before serving.
