  • Fine sea salt and freshly ground black pepper

    Bring a large pot of water to a boil.

    Set a timer for 5 minutes and 15 seconds, gently lower the eggs into the pot, start the timer, and turn the heat down so that the water boils gently.

    While the eggs cook, prepare an ice bath.

    When the timer rings, transfer the eggs to the ice bath.

    Let them cool completely, then gently crack the shells and carefully peel the eggs.

    This is a delicate process and takes practice since the egg is still soft on the inside.

    The peeled eggs can be kept in the refrigerator for up to 2 days.

    To serve, bring a pot of water to 140F (60C).

    Place the eggs in the water for 10 minutes to just heat them through.
