  • 3 cups sugar
  • 12 egg yolks
  • water
  • oil to taste

Directions

    Bring 350 grams sugar with a bit of water to boil, until it reaches the highest point (a bit after boiling, and when it is at 106 C).

    Remove from heat, and let cool.

    Add the egg yolks slowly, stirring constantly so the yolks don't cook.

    Remove from heat, and continue to stir until thick enough to make an egg dough.

    Grease hands, and a marble or tiled surface with oil, and shape the balls.

    Mix the remaining sugar with a little bit of water to obtain a paste.

    Dip the candies in the sugar paste, and let dry on the oiled surface.
