- 1/2 c. rice
- 2 qt. boiling water
- 1 Tbsp. salt
- 6 Tbsp. butter or margarine
- 2 lb. (7 c.) onions, chopped
- 1/4 to 1/2 c. sour cream
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 to 1/2 c. chopped parsley
- 3/4 c. shredded cheese
Directions

1Place salt in water; bring to a boil.

2Add rice.

3Cook 5 minutes.

4Drain and place in ovenproof casserole.

5Melt butter in skillet; add onions and saute onions until soft.

6Add to rice; stir.

7Cover tightly and bake at 300° for 1 hour.

8Remove from oven; add sour cream, cheese, parsley, salt and pepper to taste. Good hot or cold.
