  • 1 c. pinto beans, cooked, drained and mashed
  • 1 c. light syrup
  • 2 tsp. vanilla
  • 4 well beaten eggs
  • 1 c. sugar
  • 1 stick margarine

Directions

    Cream the sugar and butter; add eggs.

    Add syrup and mix well. Stir vanilla into mixture and pour into unbaked pie shell.

    Pour beans into mixture.

    Bake at 375° for 10 minutes.

    Reduce heat to 350° and bake for 40 to 50 minutes; when knife inserted in center of pie comes out clean, pie is done.

    Tastes like pecan pie.
