Sour Cherry Pie

- 1 cup sugar
- 2 T. cornstarch
- 2 T. minute tapioca
- 1/4 tsp. salt
- 5 cups frozen sour cherries
- 1/2 tsp. vanilla
- 2 tbsp. butter
- 2 pastry crusts
Directions

1Preheat oven to 400 degrees.

2Prepare crust, put bottom crust in pan.

3Combine cherries with cornstarch, tapioca, salt, vanilla and mix.

4Pour into pan and press fruit to settle.

5Dot with chunks of butter.

6Lay in top crust and cut vents in with tip of sharp knife.

7Bake at 400 degrees for 10 minutes.

8I recommend a baking sheet underneath to catch the run over.

9Reduce and bake additional 40 -50 minutes.

10Do NOT under bake or pie will not thicken.

11The pie should bubble and run over for at least 10 minutes.

12That's how you know it's done.

13Allow to cool at least 1 hour before slicing if you want it to hold together.
