Southern Egg Gravy

Ingredients
- 4 tablespoons skimmed fat from turkey drippings
- 3 tablespoons chopped shallots
- 4 tablespoons unbleached all-purpose flour
- Turkey pan drippings, (no fat) mixed with low-sodium turkey or chicken stock to make 4 cups
- 4 eggs, hard-boiled and chopped
- Salt and freshly ground black pepper
Directions

1Add the turkey fat to a large pot over medium-high heat.

2Add the shallots and saute until translucent.

3Whisk in the flour and cook until medium golden brown in color, about 3 to 4 minutes.

4Slowly whisk in pan the drippings with the stock and bring to a boil, then reduce the heat.

5Simmer until thick or until desired consistency is reached, about 10 to 15 minutes.

6Stir in the chopped egg and season with salt and pepper, to taste, if needed.

7Serve alongside that big beautiful bird!
