- 1 1/2 lb. bacon
- 1 1/2 c. bacon fat
- 3 c. onions, chopped
- 7 1/2 lb. green beans
- 1/2 c. wine vinegar
- 1 1/2 Tbsp. pepper
- 2 c. salted peanuts
Directions

1Slice bacon into 1/2-inch pieces and saute until crisp. Drain, reserving 1 1/2 cups fat.

2Saute onions in fat until golden.

3Cook green beans in kettle with onions, vinegar and pepper until beans are desired degree of doneness.

4Add bacon bits and chopped peanuts.

5Makes 50 (2 1/2 ounce) servings.
