  • 2 (7 oz.) pkg. corn bread mix
  • 1 tsp. salt
  • 1 c. chopped green onions
  • 3 Tbsp. chopped jalapeno peppers
  • 1 c. sour cream
  • 1 c. cottage cheese (small curd)
  • 3/4 c. margarine, melted
  • 4 eggs
  • 1 (16 oz.) pkg. frozen corn with red and green peppers, thawed and drained
  • 4 oz. (1 c.) shredded Cheddar cheese

Directions

    Combine all ingredients; mix well.

    Spread evenly in a greased 9 x 13-inch pan.

    Bake at 400° for 35 to 40 minutes, or until deep golden brown and a toothpick inserted in center comes out clean. Cool 10 minutes; cut into squares.
