  • 2 medium ripe tomatoes, diced
  • 1 medium red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 jalapenos, stemmed and minced
  • 1 cup corn kernel, drained
  • 2 cups canned black-eyed peas, rinsed
  • 1 cup baby lima beans
  • 2 garlic cloves, finely chopped
  • 14 teaspoon cumin
  • 1 lime, juice of
  • 1 tablespoon olive oil
  • salt
  • pepper
