Soy Bean Salad

- 1 bag Soy beans cooked in water
- 100 ml Frozen mixed vegetables
- 1 Cucumber
- 1 Mayonnaise
- 1 dash Salt and pepper
- 1 Coarsely ground black pepper
Directions

1Rinse the soybeans briefly and drain in a colander or sieve.

2(With some types of cooked soybeans there's no need for rinsing.)

3Defrost the mixed vegetables in the microwave (1 to 2 minutes at 500w - watch and adjust.)

4Cut the cucumber into 1 cm dice.

5Sprinkle with salt and leave for a while, then squeeze out the excess moisture.

6Put all of the above in a bowl, and flavor with mayonnaise, salt, pepper and coarsely ground black pepper.

7With potato chips: I crushed some potato chips and sprinkled them on top.

8An easy reuse: If you have leftover salad...

9Mix with egg and turn into a Spanish style tortilla!

10Just mix and fry up in a pan.
