Soy Bean Salad

Ingredients

  • 1 bag Soy beans cooked in water
  • 100 ml Frozen mixed vegetables
  • 1 Cucumber
  • 1 Mayonnaise
  • 1 dash Salt and pepper
  • 1 Coarsely ground black pepper

    Rinse the soybeans briefly and drain in a colander or sieve.

    (With some types of cooked soybeans there's no need for rinsing.)

    Defrost the mixed vegetables in the microwave (1 to 2 minutes at 500w - watch and adjust.)

    Cut the cucumber into 1 cm dice.

    Sprinkle with salt and leave for a while, then squeeze out the excess moisture.

    Put all of the above in a bowl, and flavor with mayonnaise, salt, pepper and coarsely ground black pepper.

    With potato chips: I crushed some potato chips and sprinkled them on top.

    An easy reuse: If you have leftover salad...

    Mix with egg and turn into a Spanish style tortilla!

    Just mix and fry up in a pan.
