Ingredients

  • 1 lb. pork sausage
  • 3 lb. ground beef
  • 6 (No. 2) cans peeled tomatoes
  • 4 (8 oz.) cans tomato puree
  • 6 (16 oz.) cans tomato sauce
  • 1 jar (large) pimentos, chopped
  • 4 cloves garlic, pressed
  • 4 Tbsp. olive oil
  • salt and pepper to taste
  • 3 Tbsp. paprika
  • 3 bay leaves, crushed
  • 4 Tbsp. oregano
  • 6 Tbsp. Parmesan or Romano cheese
  • 2 cans mushroom stems and pieces
  • 2 c. dry red wine (Chianti, etc.)
  • 3 large onions
  • 8 celery stems
  • 2 large green peppers (optional)
  • 1 or 2 Tbsp. olive oil

    Combine sausage and ground beef.

    Mix well.

    Add about 1/5 of the spices and flavoring, 1/2 cup red wine and 1 tablespoon olive oil. Cook until brown. Add to sauce.
